Nussstriezel - sweet bread with a nut-filling

This is another German, or more precisely Bavarian, all-time favourite, similar to the Jewish challah. Nussstriezel is something that my grandma would make on weekends when I was a child and I have always loved it! So this is a pretty old recipe but I am convinced that those old family recipes are worth preserving and this is my contribution to helping those bakes and recipes survive.

You can choose your own combination of nuts or just go for one sort of nuts for the filling - that's up to you. But you should have about 250g (9 oz.) of nuts, no matter which ones you prefer. You can also make the Striezel more rustic by using only chopped nuts or slightly more elegant by using finely ground nuts.

And no worries: It's a lot easier to prepare a Nussstriezel than the pronunciation (for non-natives) suggests ;-)






With a normal-sized loaf tin you get aroung 20 slices of cake.


For the yeast dough you will need:
  • 125ml (4 oz.) warm milk
  • 375g (13 oz.) all-purpose flour
  • 1 package of dry yeast
  • 60g (2 oz.) sugar
  • 75g (2.6 oz.) softened butter
  • 1 egg
  • a pinch of salt

For the nut-filling you will need:
  • 100g (3.5 oz.) ground hazelnuts
  • 30g (1 oz.) chopped pistachios
  • 70g (2.5 oz.) chopped almonds
  • 50g (2) ground walnuts
  • 125ml (4 oz.) cream
  • 1 egg
  • 100g (3.5 oz.) sugar
  • some cinnamon powder
  • 1 tbsp orange zest

Additionally to brush the cake:
  • 1 tbsp milk
  • 1 egg yolk


1. For the dough, mix the flour, dry yeast and sugar in a large bowl. Add the lukewarm milk, butter, egg and salt and knead until you get a smooth dough. Cover the bowl with a wet and warm kitchen towel and leave to raise for about 45 minutes, until doubled in size.

2. For the nut-filling, combine all the ingredients in a small bowl. Line the loaf tin with baking parchment.

3. Preheat your oven to 180°C (356F).
Knead the dough thoroughly and on a floured surface, roll it out into a rectangle of about 35 x 45 cm (13 x 17 inches) in size. Spread the nut-filling evenly on the dough and roll it up, starting from the longer side of the rectangle. Cut in half lengthwise and twist the two strands around each other, similar to braiding. Place into the loaf tin and leave to raise for another 15 to 20 minutes.
Beat the egg and milk and brush the Nussstriezel generously. Bake for about 35 minutes.

Dominoes

I know, I'm a bit late with this post of a traditional German Christmas treat... But work is keeping me pretty busy.
Anyways, I think these dominoes - a lebkuchen base, with quince jelly and orange-scented marzipan on top, dipped in chocolate - are a wonderful little treat any time during winter.
Dominoes - Dominosteine in German - aren't particularly hard to make; they do take some time, though. But there is no doubt they are worth the effort!




For 35-40 dominoes you will need:

For the lebkuchen-base:
  • 130g (4.6 oz.) runny honey
  • 30g (1 oz.) sugar
  • 40g (1.4 oz.) butter
  • 100g (3.5 oz.) milk chocolate
  • 150g (5.3 oz.) all-purpose flour
  • 2 heaped tsp. gingerbread spice (cinnamon, cloves, ginger, allspice, nutmeg)
  • 1 tsp. ground tonka bean
  • 1 1/2 tsp baking powder
  • a pinch of salt
  • 1 egg 

For the filling:
  • 200g (7 oz.) thick-cut quince jelly
  • 200g (7 oz.) marzipan
  • zest of one organic orange
  • 1 tbsp.orange flower water
  • 1-2 tbsp. icing suhar
  • 200g (7 oz.) dark (couverture) chocolate

1. Preheat your oven to 160°C /320 F. Line a baking tray with baking parchment. Place a 20x20cm / 8x8 inch baking frame on the baking parchment. 
For the base, place honey, sugar and butter into a pan and bring to the boil. Let cool slightly. Chop the chocolate and add to the warm honey mixture and melt while stirring. Sift flour, baking powder, spices and salt into a large mixing bowl. Add the warm honey mixture and the egg and stir until you get a homogenous but gooey batter. Fill the batter into he baking frame and bake at 160°C / 320 F for about 25-30 minutes.

The base will feel very tough right after baking and cooling, which is normal. The base will become nice and soft after a day and have a perfect lebkuchen texture.

2. Knead the marzipan, adding the orange zest, orange flower water and the sifting sugar until smooth and no longer very sticky. Roll out to match the size of your baking frame and set aside.
After cooling, spread the quince jelly onto the lebkuchen base (you might want to gently heat the jelly to make it spreadable). Place the marzipan layer on top and refrigerate for about 30 minutes to help the layers stick together.

3. Cut your dominoes plate into cubes of about 3/4 inch x 3/4 inch.
Gently melt the chocolate over a hot-water bath. Dip each dominoe into the chocolate and let them set on a cooling rack or on a parchment-lined baking tray. Decorate with edible gold dust if you like.
 

Dominosteine

Ich weiß, ich weiß, Weihnachten ist eigentlich vorbei und damit auch die klassische Zeit für Dominosteine...
Leider musste ich meinen kleinen Blog in lezter Zeit sträflich vernachlässigen, da mich die Arbeit ganz schön auf Trab hält. Daher folgt nun auf vielfachen Wunsch von Freunden mit etwas Verspätung noch mein Rezept für Dominosteine! Sie schmecken auch nach Weihnachten noch toll und sind ein nettes kleines Mitbringsel oder Dankeschön in der gesamten kalten Jahreszeit.

Dominosteine sind nicht schwer zu machen, allerdings benötigt die Herstellung etwas mehr Zeit. Der Aufwand lohnt sich aber auf jeden Fall!





Für etwa 35-40 Stück benötigt man:

Für den Teig
  • 130 g flüssiger Honig
  • 30 g Zucker
  • 40 g Butter
  • 100 g Vollmilchschokolade
  • 150 g Mehl
  • 2 gehäufte TL Lebkuchengewürz
  • 1 TL gemahlene Tonkabohne
  • 1 1/2 TL Backpulver
  • eine Prise Salz
  • 1 Ei

Für den Belag
  • 200 g relativ festes Quittengelee
  • 200 g Marzipan
  • Schale einer unbehandelten Orange
  • 1 EL Orangenblütenwasser
  • 1-2 EL Puderzucker
  • 200 g Zartbitterkuvertüre


1. Den Ofen auf 160°C vorheizen. Ein Bachblech mit Backpapier auslegen. Einen viereckigen Backrahmen von etwa 20x20 cm darauf platzieren.
Für den Teig Honig, Zucker und Butter in einen Topf geben und aufkochen lassen. Etwas abkühlen lassen. Kuvertüre hacken, hinzugeben und unter Rühren schmelzen. Mehl, Backpulver, Gewürze und Salz in eine große Rührschüssel sieben. Die noch warme Honigmasse in die Rührschüssel geben, das Ei hinzufügen und kräftig mit einem Kochlöffel verrühren, bis ein homogener, zäher Teig entsteht. Den Teig in die Backform füllen und glatt streichen. Im vorgeheizten Backofen ca 25-30 Minuten backen. Auskühlen lassen.

Der Boden wird sich nach dem Backen ziemlich hart anfühlen; das ist normal. Über Nacht wird der Teig wieder weich und bekommt die perfekte Honigkuchen-Konsistenz.

2. Das Marzipan mit Orangenblütenwasser, Orangenabrieb und Puderzucker glatt verkneten, bis die Masse geschmeidig aber nicht mehr klebrig ist. Auf die Größe der Backform ausrollen und beiseite stellen.
Den Boden nach dem Auskühlen mit dem Quittengelee (evtl. in einem Topf leicht erwärmen, damit es leichter streichbar wird) bestreichen. Das Marzipan auf den Lebkuchenboden geben und etwa 30 Minuten in die Gefriertruhe geben, damit die Schichten ordentlich aneinander haften.

3. Die Dominoplatte in etwa 2x2 cm große Würfel schneiden (Am besten mit einem Brotmesser mit Wellenschliff).
Kuvertüre bei kleiner Hitze über dem Wasserbad schmelzen. Dominosteine einzeln in die geschmolzene Kuvertüre tauchen und zum Abtropfen auf ein Kuchengitter oder ein mit Backpapier ausgelegtes Backblech setzen. Nach Belieben mit essbarem Goldstaub verzieren.

Macadamia-Cheesecake-Thumbprints

As you might know by now, I love any kind of cheesecake! Some time ago I came across a recipe for Cheesecake Thumbprints by the fantastic Martha Stewart - a total revelation! I slightly changed the original recipe and added macadamias for a little extra crunch.




This recipe yields about 40 cookies.

For the cookie base you will need:
  • 225g(8 oz.) butter
  • 200g (7 oz.) all-purpose flour
  • 50g (2 oz.) ground macadamias
  • 50g (2 oz.) sugar
  • a pinch of salt
  • 1egg yolk

For the cheesecake filling you will need: 
  • 125g (4.5 oz.) cream cheese
  • 50g (2 oz.) sugar
  • 1/4 tsp vanilla extract
  • 1 egg yolk

1. Preheat your oven to 160°C / 320 F. Line a baking sheet with baking parchment.
For the cookie base, combine all the ingredients in a large bowl and knead until an elastic and smooth dough has formed. Refridgerate for about 30 minutes. 


2. For the cheesecake filling, combine all the ingredients in a small bowl and whisk until combined and smooth.
Shape tablespoons of dough into balls and place them onto the baking sheets. Using your thumb, make an intendation into the centre of each ball. Bake for about 10 minutes at 160°C / 320 F.
While the cookies are still hot you might want to reshape the indentation, using the handle of a thick wooden spoon. Then fill the centre of each cookie with about 1 teaspoon of the cheesecake filling. Return the cookies to the oven and bake for another 8 to 10 minutes. Let them cool completely. 









Macadamia-Käsekuchen-Plätzchen

Wie der Ein oder Andere vielleicht weiß, liebe ich Käsekuchen in allen möglichen Varianten. Da so ein ganzer Käsekuchen für einen Zwei-Personen-Haushalt (von dem 50% sehr gesundheitsbewusst sind und sich vorbildlich ernähren) oftmals zu groß und mächtig ist, bietet dieses Rezept die perfekte Alternative: Plätzchen, die mit einer Käsekuchencreme gefüllt sind. Die Idee zu diesen Plätzchen stammt von der fantastischen Martha Stewart, ich habe das Rezept jedoch nach meinen Vorstellungen abgeändert und Macadamianüsse für ein wenig Extra-Crunch hinzugefügt. Zugegebenermaßen sind es nicht die hübschesten Kekse aller Zeiten, aber dafür wahrscheinlich die leckersten ;-)





 Die Menge reicht für etwa 40 Plätzchen.

Für den Plätzchenteig benötigt man:
  • 225 g Butter
  • 200 g Mehl
  • 50 g gemahlene Macadamianüsse
  • 50 g Zucker
  • eine kleine Prise Salz
  • 1 Eigelb

Für die Käsekuchenfüllung benötigt man:
  • 125 g Frischkäse
  • 50 g Zucker
  • 1/4 TL Vanilleextrakt
  • 1 Eigelb

1. Den Ofen auf 160°C vorheizen. Ein Backblech mit Backpapier auslegen.
Für den Plätzchenteig alle Zutaten in eine große Rührschüssel geben und so lange kneten, bis ein fester aber glatter Teig entstanden ist. Etwa 30 Minuten lang kühl stellen.
 
2. Alle Zutaten für die Käsekuchenfüllung miteinander verrühren.
Den Teig zu Kugeln von etwa 2 cm Durchmesser verarbeiten und auf das Backblech setzen. Mit dem Daumen vorsichtig eine Mulde in die Mitte der Kugeln drücken und sie dabei etwas abflachen. Im vorgeheizten Backofen etwa 10 Minuten lang backen. So lange die Plätzchen noch heiß sind, die Mulde bei Bedarf nochmals nachformen; dazu am besten den Stiel eines Holzkochlöffels verwenden, um sich nicht zu verbrennen! Die Käsekuchenmasse gleichmäßig auf die Mulden der Plätzchen verteilen. Im vorgeheizten Backofen weitere 10 Minuten backen. Auskühlen lassen.

Pumpkin Cheesecake

Unfortunately work does not leave me much time to be active on my little blog :(
But I really wanted to share a sort of Halloween-themed recipe with you. I came up with this Pumpkin Cheesecake and I love how it turned out: a deep hue of orange, rich and incredibly fragrant! Enjoy!






You will need a 18 cm / 7 inch springform.

For the cheesecake base: 
  • 150g (5.3 oz) all-purpose flour
  • 20g (0.7 oz)sugar
  • a pinch of salt
  • 100g (3.5 oz) cold butter
  • 2 tbsp. cold water
For the cheesecake filling:
  •  300g (11 oz) hokkaido pumpkin (or canned pumpkin puree)
  • 450g  (16 oz) cream cheese
  • 100g (3.5 oz) muscovado sugar or simple brown sugar
  • 1/4 tsp. each ground cinnamon, clove, cardamom, coriander seeds, ginger, tonka bean
  • 1 tbst. lemon juice
  • 3 eggs


1. Wash, deseed the pumpkin, cut the flesh into wedges and together with half a cup of water place them into an oven-proof dish. Bake them at 170°C / 338F for about 45 minutes until the wedges are cooked soft.

2. Knead the flour, sugar, salt, butter and cold water until you get a firm and smooth dough. Put in the fridge for about 30 minutes. Line your springform with baking parchment. Then take three quarters of the dough and roll it out until it matches your springform and press the base into the bottom of the springform. To bake the base blind, cover it with baking parchment and fill dried beans or lentils into the springform.
Roll out the rest of the dough and cut out shapes to your liking. Place them on a baking tray.
Bake the cookies and the base at 170°C / 338 F for about 15 mintues, then remove the cookies to let them cool and also remove the lentils in their parchment paper and bake the "naked" base for another 10 minutes until slightly golden.

3. Blend the soft pumpkin wedges until very smooth and remove any chunks that might be left. Add the cream cheese, brown sugar, spices and lemon juice and stir well. Add the eggs and give it another stir. Pour into the springform on top of the pre-baked base. Bake at 150°C / 300F for about 45 minutes. Let cool completely.

4. Dust the cut-out cookies with icing sugar and use them to decorate the cake.

Pumpkin Cheesecake - Kürbis-Käsekuchen

Leider komme ich inzwischen durch die Arbeit nicht mehr dazu, mich so um meinen Blog zu kümmern, wie ich das eigentlich will. Aber zu Halloween wollte ich es mir nicht nehmen lassen, ein passendes Rezept mit euch zu teilen. Dazu habe ich mir diesen Kürbis-Käsekuchen ausgedacht und ich muss sagen, ich bin mit dem Ergebnis sehr zufrieden. Die Farbe ist wunderschön satt orange, er schmeckt herrlich nach den verschiedenen Gewürzen und passt damit hervorragend zur Jahreszeit.








Das Rezept ist auf eine Springform von etwa 18 cm Durchmessern ausgelegt.



Für den Boden benötigt man:
  • 150 g Mehl
  • 20 g Zucker
  • eine Prise Salz
  • 100 g kalte Butter
  • 2 EL kaltes Wasser


Für die Käsekuchenmasse benötigt man:
  • 1/2 Hokkaido-Kürbis (etwa 300g Fruchtfleisch)
  • 250 g Magerquark
  • 200 g Frischkäse
  • 100 g Muscovado-Zucker oder einfachen braunen Zucker
  • je 1/4 TL Zimtpulver, Nelkenpulver, Kardamom, gemahlene Koriandersamen, Ingwerpulver, gemahlene Tonkabohne
  • 1 EL Zitronensaft
  • 3 Eier


1. Den Kürbis waschen, Kerne und Fasern entfernen, Fruchtfleisch in Spalten schneiden. Mit etwa einer halben Tasse Wasser in eine Auflaufform geben und bei 170°C im Ofen in etwa 45 Minuten weich garen.

2.  Aus Mehl, Zuckern, Salz, Butter und Wasser einen festen Mürbeteig kneten. Etwa 30 Minuten kalt stellen. Anschließend 3/4 des Teiges auf die Größe der Springform ausrollen. Diese mit Backpapier versehen und den ausgerollten Teig hineingeben und fest andrücken; ein Rand ist nicht notwendig. Um den Boden blind zu backen, mit einem Stück Backpapier bedecken und mit getrockneten Hülsenfrüchten beschweren.
Den restlichen Teig ausrollen und mit Ausstechförmchen kleine Kekse herstellen und auf ein mit Backpapier ausgelegtes Backblech geben.
Den Boden und die Kekse gemeinsam in den vorgeheizten Ofen (evtl. parallel zum Kürbis backen!) geben und bei 170°C ca. 15 Minuten lang backen. Anschließend die Kekse zum Auskühlen aus dem Ofen nehmen und die Hülsenfrüchte aus der Springform entfernen und weitere 10 Minuten backen lassen, bis der Boden leicht Farbe bekommt.

3. Die weich gegarten Kürbisspalten noch warm pürieren. Evtl. durch ein Sieb passieren. Mit Quark, Frischkäse, Zucker, Zitronensaft und Gewürzen verrühren. Nach Belieben noch mit einzelnen Gewürzen nachwürzen. Anschließend die Eier unterrühren.
Die Maße in die Springform auf den vorgebackenen Boden gießen und bei 150°C etwa 45 Minuten lang backen. Gut auskühlen lassen.

4. Die ausgekühlten Kekse nach Belieben mit Puderzucker bestäuben und den ausgekühlten Kuchen damit dekorieren.
